Ingredients
  

  • 5 cups water or chicken broth
  • 2 breasts chicken chopped into small pieces
  • 2 sweet potatoes chopped
  • 1 can black beans
  • 0.5 yellow onion diced
  • 0.5 red bell pepper diced
  • 4 cloves garlic minced
  • 0.5 cup corn
  • 3 tbsp chicken bouillon
  • 1 tsp Mexican oregano
  • 0.5 tsp nutmeg
  • 1 tsp ground black pepper
  • 1 tbsp avocado oil
  • 2 tbsp butter
  • to taste corn chips, avocado, lime, cilantro, spice for topping

Instructions
 

  • In a large pot over medium-high heat, add 1 tbsp olive oil and 2 tbsp butter. Add the chopped chicken and sear them for three to four minutes. After this, add the diced onions, and continue to cook for another two minutes.
  • Next, add five cups of water followed by the chopped sweet potatoes, black beans, corn, red bell peppers, garlic, 3 tbsp chicken bouillon, 1 tsp ground black pepper, 1 tsp Mexican oregano, and 1/2 tsp nutmeg. Place the lid over the pot and cook for 15 to 20 minutes.
  • Serve hot with desired toppings.
