Fall Chicken Soup
Ingredients
- 5 cups water or chicken broth
- 2 breasts chicken chopped into small pieces
- 2 sweet potatoes chopped
- 1 can black beans
- 0.5 yellow onion diced
- 0.5 red bell pepper diced
- 4 cloves garlic minced
- 0.5 cup corn
- 3 tbsp chicken bouillon
- 1 tsp Mexican oregano
- 0.5 tsp nutmeg
- 1 tsp ground black pepper
- 1 tbsp avocado oil
- 2 tbsp butter
- to taste corn chips, avocado, lime, cilantro, spice for topping
Instructions
- In a large pot over medium-high heat, add 1 tbsp olive oil and 2 tbsp butter. Add the chopped chicken and sear them for three to four minutes. After this, add the diced onions, and continue to cook for another two minutes.
- Next, add five cups of water followed by the chopped sweet potatoes, black beans, corn, red bell peppers, garlic, 3 tbsp chicken bouillon, 1 tsp ground black pepper, 1 tsp Mexican oregano, and 1/2 tsp nutmeg. Place the lid over the pot and cook for 15 to 20 minutes.
