Tofu Soup
Ingredients
- 1 tablespoon avocado oil
- 1 small onion diced
- 1 medium carrot sliced
- 4-6 cups vegetable broth or chicken stock
- 1 medium roma tomato chopped
- 1/2 pack medium firm tofu 1/2 pound, drained
- 1 tablespoon miso paste
- 1/4 cup broccoli florets
- 1 teaspoon sesame oil
- 2 tablespoons spring onion finely chopped
- to taste salt and pepper
Instructions
- In a medium sized cooking pot, heat oil over medium-high for 1 minute. Add onion and carrot and sauté until fragrant, about 1-2 minutes.
- Add vegetable broth, tomato, tofu, and miso paste. Stir well and bring to a boil.
- Reduce heat to medium and add broccoli. Continue cooking for another 2-3 minutes until tender.
- Season with sesame oil, salt and pepper to taste.
- Garnish with spring onions and serve warm.
