Butternut Squash and Black Beans
Ingredients
- 1 medium Butternut Squash Cooked and cubed (4 cups)
- 1 tsp Coconut Oil
- 1 cup Sweet Onion Diced
- 1 red pepper Red Pepper Chopped
- 2 cloves Garlic Minced
- 2 tsp Cumin
- 1/4 tsp Red Pepper Flakes
- 1 can Black Beans Rinsed and drained
- to taste Salt
- to taste Pepper
Instructions
- To cook butternut squash quickly just cut in half and remove seeds.
- Place face down on a microwavable dish and place in microwave for 8 minutes. Flip over, cover with wax paper and cook an additional 8 minutes. Remove and allow to cool. Once cooled, cut with a knife to obtain cubes of squash.
- Heat coconut oil in skillet and add onion, pepper and garlic. Cook for about 5 minutes or until onions are translucent. Add spices and cook 1 more minute.
- Add beans and squash to mixture.
