Tips for the Best French Peasant Soup:

  • Lentil Choice: We recommend French green lentils (also known as du Puy lentils) for their firm texture and slightly peppery flavor. Brown or green lentils will also work.
  • Vegetable Variations: Feel free to swap out vegetables based on what’s in season or what you have on hand. Carrots, potatoes, or turnips would be excellent additions.
  • Herb Power: Don’t skimp on the herbs! Fresh thyme and a good quality herbes de Provence are key to the soup’s signature flavor.
  • Broth Quality: Using a flavorful vegetable broth will significantly enhance the overall taste of the soup. Homemade is best, but a good store-bought option will also work.
