Ingredients
  

  • 6 cups Chicken Broth I used bullion cubes
  • 1 14oz can Coconut Milk
  • 1 cup Wild Rice and seasoning if provided in the box
  • 2 tbsp Butter
  • 2-3 cups Kale roughly chopped or torn apart, remove thick stems
  • 1 Large Sweet Potato
  • 1 8oz container Mushrooms sliced
  • 1 Large Onion diced
  • 2 Large Carrots diced
  • 2 Stalks Celery diced
  • 4 Cloves Garlic minced
  • As needed Salt
  • As needed Pepper
  • As needed Paprika
  • As needed Parsley
  • Optional Chicken or other protein
  • Optional to taste Red Pepper Flakes

Instructions
 

  • In a large pot or Dutch oven, melt butter over medium heat.
  • Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  • Add garlic and cook for another minute until fragrant.
  • Pour in chicken broth and bring to a boil.
  • Add wild rice and reduce heat to a simmer. Cover and cook for 20-25 minutes, or until rice is tender.
  • Stir in sweet potato and cook for another 10 minutes, or until tender.
  • Add kale and coconut milk and cook until kale is wilted, about 5 minutes.
  • Season with salt, pepper, and paprika to taste.
  • Serve hot.
