Frequently Asked Questions:
Q: Can I use fresh tomatoes instead of canned?
A: While you can use fresh tomatoes, canned diced tomatoes provide a more consistent flavor and texture, especially in a slow cooker. If using fresh, you’ll need about 6-8 medium tomatoes, peeled, seeded, and chopped.
Q: Can I make this soup vegan?
A: Absolutely! Simply substitute the half & half with a plant-based cream alternative, like cashew cream or coconut cream. Ensure your butter is also a plant-based alternative.
Q: Can I add other vegetables to the soup?
A: Yes! Feel free to add other vegetables like celery, bell peppers, or zucchini. Add them along with the carrots and onions.
Q: How long can I store leftover soup?
A: Leftover soup can be stored in an airtight container in the refrigerator for up to 3-4 days. It also freezes well for up to 2-3 months.
Q: Can I use an immersion blender instead of a regular blender?
A: Yes, an immersion blender works perfectly! You can blend the soup directly in the slow cooker, saving you the hassle of transferring it to a regular blender.
