Ingredients
  

  • 1.5 lbs Halibut or other white fish
  • 1 medium Onion Chopped
  • 2 cloves Garlic Minced
  • 4 cups Fish or vegetable broth
  • 1 can Diced tomatoes 14.5 oz
  • 1 cup Potatoes Diced
  • 1 cup Carrots Sliced
  • 0.5 cup Heavy cream
  • 2 tbsp Olive oil
  • 1 tsp Dried thyme
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Instructions
 

  • Heat olive oil in a large pot or Dutch oven over medium heat.
  • Add onion and cook until softened, about 5 minutes.
  • Add garlic and cook for 1 minute more.
  • Add broth, diced tomatoes, potatoes, and carrots. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes and carrots are tender.
