What makes this Potato Peel Soup special?

  • Sustainability: A brilliant way to minimize food waste and embrace a more eco-friendly kitchen.
  • Flavorful & Unexpected: The peels create a unique, subtly sweet potato flavor that’s different from traditional potato soup.
  • Easy to Make: With a relatively short prep and cook time, this soup is perfect for a weeknight meal.
  • Versatile: Customize it with your favorite toppings and seasonings (more on that below!).

Tips for the Best Potato Peel Soup:

  • Wash Thoroughly: This is crucial. Scrub those potatoes well to remove any dirt or residue. Organic potatoes are ideal, but conventional potatoes are fine as long as they’re washed meticulously.
  • Don’t Overcook: Simmering the peels for the right amount of time is key. You want them to be very tender, but not falling apart.
  • Creamy Texture: While the recipe includes optional heavy cream, you can also use milk, half-and-half, or even a plant-based alternative for a lighter soup.
  • Get Creative with Toppings: A swirl of cream, a sprinkle of chopped chives, a dollop of sour cream, or even some crispy bacon bits can elevate this soup to the next level.

Frequently Asked Questions:

  • Can I use sweet potato peels? Absolutely! Sweet potato peels will create a slightly sweeter and more vibrant soup.
  • Do I need to peel the potatoes very thinly? Not necessarily. The peels don’t need to be paper-thin, but avoid any thick, woody parts.
  • Can I make this soup ahead of time? Yes! Potato Peel Soup tastes even better the next day. Store it in an airtight container in the refrigerator for up to 3 days.
  • Can I freeze this soup? Yes, but the texture may change slightly upon thawing. It’s best to freeze it without the cream.
  • Is this soup vegan? It can be! Simply omit the heavy cream and use vegetable broth.
