Celeriac, Potato & Apple Soup
Ingredients
- 1.5 tablespoon Cooking oil
- 1 small Celeriac Peeled, diced
- 2 medium Potatoes Peeled, diced
- 2 medium Apples Peeled, diced
- 2 medium Onion Peeled, diced
- 2 sticks Celery Diced
- 4 cloves Garlic Chopped
- 1 - 1.5 liter Vegetable Broth Adjust to desired consistency
- 50 g Spinach Optional
- To taste Salt & Pepper

- Heat the oil in a large pot over medium heat. Add the onion and celery and cook until softened, about 5-7 minutes.
- Add the celeriac and potatoes and cook for another 5 minutes, stirring occasionally.
- Add the garlic and cook for 1 minute more.
