Easy Cozy Autumn Soup
Ingredients
- 6 cups Chicken Broth I used bullion cubes
- 1 14oz can Coconut Milk
- 1 cup Wild Rice and seasoning if provided in the box
- 2 tbsp Butter
- 2-3 cups Kale roughly chopped or torn apart, remove thick stems
- 1 Large Sweet Potato
- 1 8oz container Mushrooms sliced
- 1 Large Onion diced
- 2 Large Carrots diced
- 2 Stalks Celery diced
- 4 Cloves Garlic minced
- As needed Salt
- As needed Pepper
- As needed Paprika
- As needed Parsley
- Optional Chicken or other protein
- Optional to taste Red Pepper Flakes
Instructions
- In a large pot or Dutch oven, melt butter over medium heat.
- Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
- Add garlic and cook for another minute until fragrant.
- Pour in chicken broth and bring to a boil.
- Add wild rice and reduce heat to a simmer. Cover and cook for 20-25 minutes, or until rice is tender.
- Stir in sweet potato and cook for another 10 minutes, or until tender.
- Add kale and coconut milk and cook until kale is wilted, about 5 minutes.
- Season with salt, pepper, and paprika to taste.
- Serve hot.
