Creamy Pea and Spinach Soup
Ingredients
- 4 cups Vegetable Broth
- 1 tablespoon Butter
- 1 medium Onion chopped
- 1 medium Potato chopped
- 1 cup Peas fresh or frozen
- 5 oz Spinach
- 1/4 cup Heavy Cream
- 1 tablespoon Lemon Juice
- to taste Salt
- to taste Pepper
- 3 hours Cherry Tomatoes for garnish (optional)
Instructions
- Heat butter in a large soup pot over medium heat. Add onion and potato and sauté for 3-4 minutes.
