As the days get shorter and the weather cools down, there’s nothing quite like a warm, comforting bowl of soup. This vibrant soup combines the sweetness of carrots with the savory depth of miso and a zesty kick of ginger, creating a harmonious blend of flavors that will tantalize your taste buds.
This isn’t your average carrot soup. The miso paste adds an umami richness that elevates the flavor profile, while the ginger provides a warming spice that’s perfect for chilly evenings. Plus, the split peas add a lovely creamy texture and a boost of plant-based protein. It’s a surprisingly simple recipe that delivers big on flavor and goodness.
Why You’ll Love This Soup:
- Flavorful & Unique: The combination of ginger, miso, and carrots is a delightful surprise.
- Nutrient-Rich: Carrots are packed with beta-carotene, and miso provides probiotics for gut health.
- Easy to Make: This soup comes together in under an hour, making it perfect for a weeknight meal.
- Comforting & Cozy: A warm bowl of this soup is the perfect way to unwind and nourish your body.
Tips for the Best Soup:
- Use Low-Sodium Stock: This allows you to control the saltiness of the soup, as miso paste is already quite salty.
- Fresh Ginger is Key: While ground ginger can be used in a pinch, fresh ginger provides a much brighter and more vibrant flavor.
- Adjust the Miso: Feel free to add more or less miso paste to suit your taste preferences.
- Emulsion Blender is your friend: For a super smooth and creamy texture, an immersion blender works best, but a regular blender will do the trick.
