- 4 slices bacon could be low fat turkey bacon
- 1 large onion peeled and chopped
- 3 cloves garlic minced
- 3 pounds russet potatoes peeled and sliced thin
- 1.5 pounds boneless skinless chicken breast
- 2 cups carrots sliced
- 2 cups celery sliced
- 8 cups chicken broth
- 2 teaspoons dried thyme
- 1/3 cup fresh chopped parsley
- 1.5 teaspoons salt
- 0.5 teaspoon black pepper
Instructions
