Ingredients
  

  • 1 large onion diced
  • 2 carrots diced
  • 2 large Yukon Gold potatoes diced
  • 2 stalks celery diced
  • 3 1/2 cups mushrooms diced
  • 4 cups cubed cottage ham
  • 9 oz Fordhook lima beans fresh or frozen
  • 1 tablespoon Herbes de Provence
  • 6 cups chicken stock

Instructions
 

  • Sauté the ham in a bit of butter in a Dutch oven until just starting to brown.

  • Add the stock and lima beans.
