Hearty Lima Bean and Ham Soup
Ingredients
- 1 large onion diced
- 2 carrots diced
- 2 large Yukon Gold potatoes diced
- 2 stalks celery diced
- 3 1/2 cups mushrooms diced
- 4 cups cubed cottage ham
- 9 oz Fordhook lima beans fresh or frozen
- 1 tablespoon Herbes de Provence
- 6 cups chicken stock
Instructions
- Sauté the ham in a bit of butter in a Dutch oven until just starting to brown.
- Add the onion, carrot, potatoes, celery, mushrooms and spices and sauté until the potatoes are getting soft, about 10 minutes.
- Add the stock and lima beans.
