Italian Tortellini Soup
Ingredients
- 1 lb Italian Sausage
- 1 cup Peppers and Onions
- 1 cup Fresh Spinach
- 1 pkg Frozen Tortellini
- 6 cups Chicken Broth
- 1 cup Heavy Whipping Cream
- 1/4 cup Parmesan Cheese For garnish
- 1 28oz can Diced Tomatoes
- 1 6oz can Tomato Paste
- 1 tsp Salt To taste
- 1/2 tsp Black Pepper To taste
Instructions
- Ground up the pound of Italian Sausage in a medium skillet until no longer pink
- In a slow cooker add cooked Italian Sausage, peppers and onions, fresh spinach, frozen tortellini, chicken broth, and heavy whipping cream.
- Stir all ingredients together well until all is covered with liquid.
- Add all seasonings, diced tomatoes and tomato paste then stir again until well combined.
- Once combined, you will cover on slow cooker on low heat and cook for 4 hours
- Lift lid and stir well and serve in a bowl with Parmesan cheese.
