- 1 Tbsp olive oil
- 1 medium yellow onion diced
- 2 cloves garlic chopped
- to taste Italian seasoning
- 3 cups chicken broth
- 1 1/2 cups aged cheddar shredded
- 1 cup milk
- 1 Tbsp Dijon mustard optional
