Ingredients
  

  • 1 T olive oil
  • 1 pound Turkey Sausage
  • 1 small onion chopped
  • 3 cloves garlic
  • 5-6 cup broth vegetable, beef, or chicken
  • 1/2 cup red wine or more broth
  • 1/2 cup water
  • 14.5 oz diced tomatoes can
  • 1 cup carrots sliced
  • 1/2 T basil
  • 1/2 t oregano
  • 8 oz tomato sauce can
  • 1 1/2 cup zucchini or squash sliced (or both)
  • 9 oz tortellini package
  • 2 T fresh parsley chopped
  • 2 cups baby spinach
  • to taste Parmesan for serving

Instructions
 

  • In a large pot (dutch oven), heat oil, add sausage and brown. Remove from pot, reserving 1 tablespoon of drippings.
  • Sauté onion, garlic and carrots. Stir in broth, red wine, water, diced tomatoes, basil, oregano, and tomato sauce.
  • Bring to a simmer and add zucchini/squash. Cook for 15 minutes.
  • Add tortellini and cook according to package directions.
  • Stir in spinach and parsley. Serve with Parmesan cheese.
