Turkey Sausage and Whole Wheat Tortellini Soup
Ingredients
- 1 T olive oil
- 1 pound Turkey Sausage
- 1 small onion chopped
- 3 cloves garlic
- 5-6 cup broth vegetable, beef, or chicken
- 1/2 cup red wine or more broth
- 1/2 cup water
- 14.5 oz diced tomatoes can
- 1 cup carrots sliced
- 1/2 T basil
- 1/2 t oregano
- 8 oz tomato sauce can
- 1 1/2 cup zucchini or squash sliced (or both)
- 9 oz tortellini package
- 2 T fresh parsley chopped
- 2 cups baby spinach
- to taste Parmesan for serving
Instructions
- In a large pot (dutch oven), heat oil, add sausage and brown. Remove from pot, reserving 1 tablespoon of drippings.
- Sauté onion, garlic and carrots. Stir in broth, red wine, water, diced tomatoes, basil, oregano, and tomato sauce.
- Bring to a simmer and add zucchini/squash. Cook for 15 minutes.
- Add tortellini and cook according to package directions.
- Stir in spinach and parsley. Serve with Parmesan cheese.
