Ingredients
  

  • 1 tablespoon avocado oil
  • 1 small onion diced
  • 1 medium carrot sliced
  • 4-6 cups vegetable broth or chicken stock
  • 1 medium roma tomato chopped
  • 1/2 pack medium firm tofu 1/2 pound, drained
  • 1 tablespoon miso paste
  • 1/4 cup broccoli florets
  • 1 teaspoon sesame oil
  • 2 tablespoons spring onion finely chopped
  • to taste salt and pepper

Instructions
 

  • In a medium sized cooking pot, heat oil over medium-high for 1 minute. Add onion and carrot and sauté until fragrant, about 1-2 minutes.
  • Add vegetable broth, tomato, tofu, and miso paste. Stir well and bring to a boil.
  • Reduce heat to medium and add broccoli. Continue cooking for another 2-3 minutes until tender.
  • Season with sesame oil, salt and pepper to taste.
  • Garnish with spring onions and serve warm.
