  • 1 lb Ground Turkey
  • 1/2 cup Parmesan Cheese, grated
  • 1/4 cup Onion, finely chopped
  • 1 egg Egg
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 8 cups Chicken Stock
  • 2 cups Water
  • 1 cup Carrots, sliced
  • 1 cup Celery, sliced
  • 1 tsp Dried Thyme
  • 1 tsp Dried Basil
  • 1 cup Red Pepper, sliced
  • 1/4 cup Green Onions, sliced
  • 8 oz Noodles

Instructions
 

  • Preheat oven to 400°F (200°C).
  • In a bowl, combine ground turkey, parmesan cheese, onion, egg, salt, and pepper. Mix well.
  • Form the mixture into 1-inch meatballs and place on a parchment-lined baking sheet.
  • Bake for 15-20 minutes, or until cooked through.
  • In a soup pot, combine chicken stock and water. Bring to a boil, then reduce heat.
  • Add carrots, celery, thyme, basil, and salt & pepper. Simmer for 10 minutes, until carrots are tender.
