Chunky Winter Vegetable & Rice Soup
Ingredients
- 30 grams Rice White rice or your favourite type
- 1 tsp Ground Cumin
- 1 tsp Ground Coriander
- 1 litre Vegetable Stock
- assorted Vegetables Chunky pieces
- 1 Chilli
- 30 grams Parsley
- to taste Salt & Pepper
Instructions
- Chop all of your vegetables into chunky pieces.
- If cooking in your Scott Simplissimo Chef: Add the vegetables, chilli and parsley into your Scott Simplissimo Chef.
- Add the rice, vegetable stock, cumin and coriander. Season with salt and pepper. Place the lid on the blender so that it is sealed.
- Select the 'Chunky Soup' setting on your blender and press start. Leave to cook and blend for the suggested 30 minutes.
- Serve with a parsley garnish and crack of salt & pepper.
- If cooking on the hob: Add all of your ingredients into a large saucepan.
- Bring to the boil on a high heat and then reduce heat and simmer for 30 minutes.
- Blend to your desired consistency.
