Chunky Winter Vegetable & Rice Soup

Ingredients
  

  • 30 grams Rice White rice or your favourite type
  • 1 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 1 litre Vegetable Stock
  • assorted Vegetables Chunky pieces
  • 1 Chilli
  • 30 grams Parsley
  • to taste Salt & Pepper

Instructions
 

  • Chop all of your vegetables into chunky pieces.
  • If cooking in your Scott Simplissimo Chef: Add the vegetables, chilli and parsley into your Scott Simplissimo Chef.
  • Add the rice, vegetable stock, cumin and coriander. Season with salt and pepper. Place the lid on the blender so that it is sealed.
  • Select the 'Chunky Soup' setting on your blender and press start. Leave to cook and blend for the suggested 30 minutes.
  • Serve with a parsley garnish and crack of salt & pepper.
  • If cooking on the hob: Add all of your ingredients into a large saucepan.
  • Bring to the boil on a high heat and then reduce heat and simmer for 30 minutes.
  • Blend to your desired consistency.
