Instructions
Chop all of your vegetables into chunky pieces.
If cooking in your Scott Simplissimo Chef: Add the vegetables, chilli and parsley into your Scott Simplissimo Chef.
Add the rice, vegetable stock, cumin and coriander. Season with salt and pepper. Place the lid on the blender so that it is sealed.
Select the 'Chunky Soup' setting on your blender and press start. Leave to cook and blend for the suggested 30 minutes.
Serve with a parsley garnish and crack of salt & pepper.
If cooking on the hob: Add all of your ingredients into a large saucepan.
Bring to the boil on a high heat and then reduce heat and simmer for 30 minutes.
Blend to your desired consistency.
