Is this soup vegan/vegetarian?

Yes! This recipe is naturally vegan and vegetarian-friendly. Just ensure your vegetable broth is also vegan/vegetarian.

Can I use frozen peas?

Absolutely! Frozen peas work perfectly well in this recipe. You may need to adjust the cooking time slightly – cook until the peas are tender.

How can I adjust the consistency?

If you prefer a thinner soup, simply add more vegetable broth or water until you reach your desired consistency. For a thicker soup, use less liquid or blend in a handful of cooked potatoes.

What if I don’t have fresh mint?

While fresh mint is highly recommended for its vibrant flavor, you can substitute with 1 teaspoon of dried mint. However, the flavor won’t be quite as bright.

Mint & Moringa Pea Soup

Ingredients
  

  • 1 Tbsp olive oil
  • 1 medium leek, thinly sliced or 1/3 cup diced yellow onion
  • 2-3 cups clear vegetable broth use a broth that isn’t very orange in color
  • 3 cups raw fresh shelled peas or frozen peas
  • ¼ cup parsley leaves, lightly packed
  • cup fresh mint leaves, packed
  • 1-2 Tbsp Kuli Kuli Pure Moringa Powder
  • to taste salt and pepper

Instructions
 

  • Heat oil in a medium saucepan. Saute leek or onions over medium heat until soft, but not browned, 3-4 minutes.
  • Add broth or water and bouillon cube and peas. Bring to a strong simmer; cook about 5 minutes for raw fresh peas, or 2 minutes for frozen.
  • Remove from heat. Add Pure Moringa Powder, parsley and mint.
  • Puree with a hand-held wand, Or pour into a blender or food processor and blend carefully on medium speed with lid well secured. Add additional water if thinner consistency is desired. Serve warm or chilled.
