Ingredients
- 1 tbsp Olive Oil
- 1 large Onion chopped
- 2 cloves Garlic minced
- 1 tsp Smoked Paprika
- 400 g Chopped Tomatoes
- 200 g Red Lentils
- 1 litre Vegetable Stock
- Salt to taste Seasoning
- Pepper to taste Seasoning
Instructions
- Preheat oven to 200C/180C fan/gas mark 6.
- Heat the olive oil in a large pot or oven-proof dish.
- Add the onion and garlic and cook until softened.
- Add the smoked paprika and cook for another minute.
- Add the chopped tomatoes, red lentils, and vegetable stock.
