Instructions
Preheat oven to 200C/180C fan/gas mark 6.
Heat the olive oil in a large pot or oven-proof dish.
Add the onion and garlic and cook until softened.
Add the smoked paprika and cook for another minute.
Add the chopped tomatoes, red lentils, and vegetable stock.
Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until the lentils are tender.
Season with salt and pepper to taste.
