Lentil and Tomato Soup

Ingredients
  

  • 1 tbsp Olive Oil
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Smoked Paprika
  • 400 g Chopped Tomatoes
  • 200 g Red Lentils
  • 1 litre Vegetable Stock
  • Salt to taste Seasoning
  • Pepper to taste Seasoning

Instructions
 

  • Preheat oven to 200C/180C fan/gas mark 6.
  • Heat the olive oil in a large pot or oven-proof dish.
  • Add the onion and garlic and cook until softened.
  • Add the smoked paprika and cook for another minute.
  • Add the chopped tomatoes, red lentils, and vegetable stock.
  • Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until the lentils are tender.
  • Season with salt and pepper to taste.
