Healthy Chicken Soup
Ingredients
- 2 tablespoons olive oil
- 1 chopped onion
- 3 large carrots sliced
- 3 stalks celery chopped
- 4 cloves garlic chopped
- 1 stalk leek chopped
- 1 bag frozen peas
- 1 bag frozen corn
- 1 bag fresh mushrooms sliced
- 3 cloves garlic minced
- 1 can black beans rinsed
- 1 can tomatoes with juices
- 1/2 teaspoon cumin
- 1.5 pound chicken breast cut in chucks-seasoned w/ essence seasoning
- 1 bay leaf
- to taste salt and pepper
- for serving parsley
- 2 32 oz chicken broth
Instructions
- In a large soup pot, heat olive oil on medium heat.
- Add season raw chicken and cook till browned, about 7 minutes.
- Add onion & ginger and cook 3 minutes.
- Add other vegetables leeks, carrots, celery and cook 5 minutes until they soften.
- Add mushrooms and garlic.
- Add chicken stock, corn, peas, black beans and tomatoes.
- Add spices cumin and bay leaf.
- Cover and bring to a boil.
- Once boiling, reduce heat to medium low and cook until done.
- Garnish with parsley.
- Salt, pepper or hot sauce to taste.
