In a large soup pot, heat olive oil on medium heat.
Add season raw chicken and cook till browned, about 7 minutes.
Add onion & ginger and cook 3 minutes.
Add other vegetables leeks, carrots, celery and cook 5 minutes until they soften.
Add mushrooms and garlic.
Add chicken stock, corn, peas, black beans and tomatoes.
Add spices cumin and bay leaf.
Cover and bring to a boil.
Once boiling, reduce heat to medium low and cook until done.
Garnish with parsley.
Salt, pepper or hot sauce to taste.
