Menudo, in the Philippines, is a beloved dish known for its vibrant flavors and tender meat. While variations exist across the islands, this recipe delivers a classic, authentic taste that will transport you straight to the Philippines. It’s surprisingly easy to make, even for beginner cooks!

What makes this Pork Menudo special?

This recipe focuses on achieving a balance of savory, slightly sweet, and tangy flavors. The addition of liver spread (or paté) adds a unique depth and richness that sets it apart. Don’t be intimidated by the liver spread – it melts into the sauce, creating a velvety texture and umami bomb!

Tips for the Best Pork Menudo:

  • Pork Selection: Using pork kasim (shoulder) is ideal as it remains tender even after long simmering.
  • Marinating is Key: Don’t skip the marinating step! It helps tenderize the pork and infuse it with flavor.
  • Simmer, Don’t Boil: A gentle simmer is crucial for tenderizing the pork and developing a rich sauce. Avoid a vigorous boil.
  • Liver Spread Substitute: If you can’t find liver spread, you can use pork liver pate as a substitute.

Serving Suggestions:

Pork Menudo is best served hot with a generous portion of steamed rice. The flavorful sauce is perfect for soaking into the rice! You can also serve it with soft bread rolls for dipping.
