Pork Menudo

Ingredients
  

  • 1 kilo pork kasim cut into cubes
  • ½ kilo pork liver cut into cubes
  • ¼ cup soy sauce
  • 1 lemon calamansi or 2 pcs.
  • ¼ tsp ground black pepper
  • 2 cloves garlic chopped
  • 1 onion chopped
  • 2 medium potatoes cut into cubes
  • 1 cup water
  • 3 tbsp liver spread/paté

Instructions
 

  • Marinate the pork in soy sauce and lemon juice for at least 30 minutes.
  • Sauté garlic and onion until fragrant.
  • Add the marinated pork and cook until browned.
  • Add water and bring to a boil. Simmer until the pork is tender.
  • Add potatoes and cook until tender.
  • In a small bowl, mix 3 tbsp of the stew with the liver spread/paté. Add to the boiling stew.
  • Season with salt and pepper to taste.
  • Serve with steamed rice or soft bread rolls.
