Ingredients
  

  • 1 tablespoon avocado oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 large bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 28 ounce crushed tomatoes
  • 15 ounce tomato sauce
  • 4 cups chicken broth
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Heat avocado oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned.
  • Add onion and bell pepper to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  • Stir in chili powder, cumin, smoked paprika, and cayenne pepper (if using). Cook for 1 minute, stirring constantly.
  • Add crushed tomatoes, tomato sauce, and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Stir in black beans and corn. Simmer for another 10 minutes.
  • Season with salt and pepper to taste.
