Paleo & Whole30 Compliant Taco Soup
Ingredients
- 1 tablespoon avocado oil
- 1 pound ground beef
- 1 medium onion, chopped
- 1 large bell pepper, chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- 28 ounce crushed tomatoes
- 15 ounce tomato sauce
- 4 cups chicken broth
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
Instructions
- Heat avocado oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned.
- Add onion and bell pepper to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
