Frequently Asked Questions:
Q: Can I make this soup ahead of time?
A: Yes! The flavors actually meld together even more beautifully after a day or two in the refrigerator. Just be aware that the noodles will absorb some of the liquid, so you may need to add a little extra broth when reheating.
Q: What kind of noodles should I use?
A: We recommend using broken lasagna noodles, but you can also use other short pasta shapes like rotini or penne.
Q: Can I freeze this soup?
A: Yes, but the noodles may become a bit soft. It’s best to freeze the soup before adding the noodles, then cook the noodles separately when you reheat it.
Q: Is this soup gluten-free?
A: Not as written, due to the lasagna noodles. You can easily make it gluten-free by using gluten-free lasagna noodles or a different gluten-free pasta.
