Low Carb African Peanut Soup

- 2 T Olive Oil
- 2 small Onions chopped
- 1 lb Daikon Radish chopped
- 2 cans Diced Tomatoes including juice
- 2 T Curry Powder
- 2 T Crushed Garlic
- 1.5 tsp Salt
- 1/2 tsp Black Pepper
- 1.5 cups Vegetable Broth
- 1 cup Natural Peanut Butter
- 1 can Coconut Milk full fat
- to taste Cilantro for garnish
- to taste Chopped Peanuts for garnish
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add chopped onions and cook until softened, about 5-7 minutes.
- Add chopped daikon radish, salt, pepper, and curry powder. Cook for another 5 minutes, stirring occasionally.
