Light Summer Tomato Soup
Ingredients
- 1 kg ripe garden tomatoes
- 1 clove garlic
- 1 tablespoon olive oil
- 2 liters water
- 1 green pepper
- 2 onions
- 1 tablespoon fresh or dried herb mix (basil, lovage, oregano)
- 100 g homemade noodles
- 1 teaspoon salt for boiling water
- to taste salt and pepper for seasoning
Instructions
- Boil 1.5 liters of water. Add 1 teaspoon of salt and mix well.
- Add the washed tomatoes to the boiling water for 2-3 minutes, then remove and cool.
- Peel and dice the cooled tomatoes.
- Heat a few drops of olive oil in a pan. Add the chopped onion and garlic and sauté until fragrant.
- Add a little water and simmer until the onion and garlic are softened.
- Add the diced peppers and tomatoes and cook for a few more minutes.
- Add the remaining boiling water and simmer for 15 minutes.
- Season with salt and pepper to taste and add the herbs.
- Add the homemade noodles and cook for 5 minutes, stirring to prevent lumps.
