ripe garden tomatoes

fresh or dried herb mix (basil, lovage, oregano)

homemade noodles

salt
for boiling water
to taste
salt and pepper
for seasoning
Instructions
Boil 1.5 liters of water. Add 1 teaspoon of salt and mix well.
Add the washed tomatoes to the boiling water for 2-3 minutes, then remove and cool.
Peel and dice the cooled tomatoes.
Heat a few drops of olive oil in a pan. Add the chopped onion and garlic and sauté until fragrant.
Add a little water and simmer until the onion and garlic are softened.
Add the diced peppers and tomatoes and cook for a few more minutes.
Add the remaining boiling water and simmer for 15 minutes.
Season with salt and pepper to taste and add the herbs.
Add the homemade noodles and cook for 5 minutes, stirring to prevent lumps.
