Ingredients
  

  • 750 gr zoete aardappelen
  • 400 ml kokosmelk
  • 1 l groentebouillon
  • 100 gr rode linzen
  • 1 stuk ui gesnipperd
  • 2 tenen knoflook fijngehakt
  • 1 el verse gember geraspt
  • 1 tl komijn
  • 1 tl kurkumapoeder
  • 2 el kerriepoeder
  • 0.5 tl kaneel
  • scheutje olie
  • naar smaak zout en peper
  • optioneel garnering bijvoorbeeld verse koriander of een scheutje kokosroom

Instructions
 

  • Verwarm een beetje olie in een grote pan. Fruit de ui tot hij zacht is.
  • Voeg de knoflook en gember toe en bak nog een minuut mee.
  • Voeg de rode linzen, kurkuma, komijn en kerriepoeder toe en bak een minuut mee.
  • Voeg de groentebouillon en zoete aardappelen toe en breng aan de kook. Laat 20-25 minuten zachtjes koken tot de zoete aardappelen en linzen gaar zijn.
  • Pureer de soep met een staafmixer tot een gladde massa.
  • Roer de kokosmelk erdoor en warm de soep nog even door. Breng op smaak met zout en peper.
  • Garneer de soep met verse koriander of een scheutje kokosroom.
