What makes this recipe special?

  • Homemade Broth Base: While you can use store-bought stock, simmering a whole chicken creates a richer, more flavourful base that elevates the entire soup.
  • Hearty Vegetables: We’ve included a colourful mix of pumpkin, potato, broccoli, zucchini and carrot for added nutrients and texture.
  • Simple & Wholesome: This recipe uses everyday ingredients, making it accessible and easy to prepare.
  • Perfect for Meal Prep: Make a big batch on the weekend and enjoy delicious lunches throughout the week.

Tips for the Perfect Soup:

  • Don’t skip the simmering: Allowing the chicken to simmer slowly is key to developing a flavourful broth.
  • Adjust the vegetables: Feel free to swap in your favourite vegetables – parsnips, celery, or sweet potatoes would all be delicious additions.
  • Noodle Choice: We recommend using a medium-sized noodle that holds its shape well. Egg noodles or traditional wheat noodles work beautifully.
  • Season to Taste: Don’t be afraid to adjust the salt and pepper to your liking. A pinch of fresh herbs like parsley or thyme can also add a lovely flavour.

Frequently Asked Questions:

Q: Can I use pre-cooked chicken?
A: Yes, you can! If you’re short on time, using a rotisserie chicken or leftover cooked chicken is a great option. Just add it in during the last 10-15 minutes of cooking.

Q: Can I make this soup in a slow cooker?
A: Absolutely! Place the chicken and water in the slow cooker and cook on low for 6-8 hours. Then, remove the chicken, shred it, and add the vegetables and noodles as directed in the recipe.

Q: Can I freeze this soup?
A: Yes, but it’s best to freeze it before adding the noodles, as they can become mushy when thawed. Add the noodles when you reheat the soup.

Q: What kind of noodles are best for chicken noodle soup?
A: Egg noodles are a classic choice, but you can also use other types of noodles like rotini, penne, or even rice noodles.

Q: How do I make the broth even more flavourful?
A: Add aromatics like onion, garlic, bay leaf, and peppercorns to the water when simmering the chicken. You can also add a splash of apple cider vinegar to help extract more flavour from the bones.

We hope you enjoy this comforting and delicious Homemade Chicken Noodle Soup! It’s a recipe that’s sure to warm your heart and soul.
