Homemade Chicken Noodle Soup

Ingredients
  

  • 1 whole chicken
  • 3 litres chicken stock
  • 350 g pumpkin peeled
  • 1 large potato peeled
  • 5 florets broccoli
  • 1 zucchini diced
  • 1 carrot diced
  • 150 g noodles
  • 1 tsp salt or to taste
  • 1/2 tsp pepper or to taste

Instructions
 

  • Place the chicken in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 60-90 minutes, or until the chicken is cooked through.
  • Remove the chicken from the pot and let it cool slightly. Shred the chicken meat and set aside.
  • Add the chicken stock to the pot. Bring to a boil.
  • Add the pumpkin, potato, broccoli, zucchini and carrot to the boiling stock. Cook for 10-15 minutes, or until the vegetables are tender.
  • Add the noodles and cook according to package directions.
  • Add the shredded chicken, salt, and pepper to the pot. Stir well and heat through.
  • Serve hot and enjoy!
