Place the chicken in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 60-90 minutes, or until the chicken is cooked through.
Remove the chicken from the pot and let it cool slightly. Shred the chicken meat and set aside.
Add the chicken stock to the pot. Bring to a boil.
Add the pumpkin, potato, broccoli, zucchini and carrot to the boiling stock. Cook for 10-15 minutes, or until the vegetables are tender.
Add the noodles and cook according to package directions.
Add the shredded chicken, salt, and pepper to the pot. Stir well and heat through.
