This recipe isn’t about strictly adhering to traditional Thai cooking; it’s about inspiration. We’ve taken the core flavour profiles – ginger, lemongrass, chilli, and coconut – and blended them with the humble cauliflower to create something new and exciting. The result is a soup that’s both familiar and exotic, comforting and invigorating.

What makes this soup special?

  • Flavour Explosion: The combination of ginger, lemongrass, and chilli creates a complex and aromatic flavour profile that will tantalize your taste buds.
  • Creamy Texture: The cauliflower and coconut milk blend together to create a luxuriously creamy texture without the need for heavy cream.
  • Healthy & Nutritious: Packed with vitamins and antioxidants, this soup is a guilt-free indulgence.
  • Easy to Make: Despite its complex flavour, this soup is surprisingly easy to make – perfect for a weeknight meal.

Tips for the Best Thai-Inspired Cauliflower Soup:

  • Bruising the Lemongrass: Bruising the lemongrass stalks releases their aromatic oils, intensifying the flavour of the soup. Gently bash them with the back of a knife or a rolling pin.
  • Spice Level: Adjust the number of chillies to your preference. Start with fewer and add more if you like it spicier.
  • Fresh is Best: While you can use ground turmeric, using fresh turmeric root will give the soup a brighter, more vibrant colour and flavour.
  • Garnish: A sprinkle of fresh coriander, a swirl of coconut milk, or a drizzle of chilli oil can elevate the presentation and flavour of the soup.
