Thai-inspired Cauliflower Soup

Ingredients
  

  • 1 head Cauliflower Cut into florets
  • 1 thumb-sized piece Ginger Peeled and grated
  • 2 stalks Lemongrass Bruised
  • 2-4 Red Chillies Adjust to taste
  • 4-5 Kaffir Lime Leaves
  • 400 ml Coconut Milk
  • 1 tsp Turmeric Powder
  • Juice of 1 Lime
  • Salt to taste Salt
  • Pepper to taste Pepper

Instructions
 

  • Combine cauliflower, ginger, lemongrass, chillies, and kaffir lime leaves in a large pot. Cover with water and bring to a boil.
  • Reduce heat and simmer until cauliflower is tender, about 20-25 minutes.
  • Remove from heat and discard lemongrass and kaffir lime leaves.
  • Blend the soup until smooth. Return to the pot.
  • Stir in coconut milk and turmeric powder. Heat gently.
  • Season with lime juice, salt, and pepper to taste.
  • Serve hot.
