Instructions
Combine cauliflower, ginger, lemongrass, chillies, and kaffir lime leaves in a large pot. Cover with water and bring to a boil.
Reduce heat and simmer until cauliflower is tender, about 20-25 minutes.
Remove from heat and discard lemongrass and kaffir lime leaves.
Blend the soup until smooth. Return to the pot.
Stir in coconut milk and turmeric powder. Heat gently.
Season with lime juice, salt, and pepper to taste.
Serve hot.
