Cheesy Mashed Potato Soup
Ingredients
- 3 T Butter
- 3 small Onions chopped
- 2 T All-purpose flour
- 4 c Water or broth
- 1 t Salt
- to taste Pepper
- 2 large Potatoes peeled and chopped into bite-size pieces
- 2-4 c Leftover mashed potatoes Approximately 3 cups
- 1 c Milk or cream
- 1/2 t Dried basil
- 1/2 t Garlic powder
- 1 c Shredded cheddar cheese
- to taste Bacon cooked and crumbled (optional)
Instructions
- Melt butter in a 3 quart saucepan over medium heat. Saute onions until tender and golden brown.
- Whisk in flour, chicken stock or water, salt and pepper.
- Add chopped potatoes and bring to a boil for 15 minutes or until potatoes are tender.
- Stir in mashed potatoes, milk, basil, garlic, and cheese and simmer until heated through.
