Ingredients
  

  • 3 T Butter
  • 3 small Onions chopped
  • 2 T All-purpose flour
  • 4 c Water or broth
  • 1 t Salt
  • to taste Pepper
  • 2 large Potatoes peeled and chopped into bite-size pieces
  • 2-4 c Leftover mashed potatoes Approximately 3 cups
  • 1 c Milk or cream
  • 1/2 t Dried basil
  • 1/2 t Garlic powder
  • 1 c Shredded cheddar cheese
  • to taste Bacon cooked and crumbled (optional)

Instructions
 

  • Melt butter in a 3 quart saucepan over medium heat. Saute onions until tender and golden brown.
  • Whisk in flour, chicken stock or water, salt and pepper.
  • Add chopped potatoes and bring to a boil for 15 minutes or until potatoes are tender.
