Leftover mashed potatoes
Approximately 3 cups

Milk or cream

Dried basil

Shredded cheddar cheese

Bacon
cooked and crumbled (optional)
Instructions
Melt butter in a 3 quart saucepan over medium heat. Saute onions until tender and golden brown.
Whisk in flour, chicken stock or water, salt and pepper.
Add chopped potatoes and bring to a boil for 15 minutes or until potatoes are tender.
Stir in mashed potatoes, milk, basil, garlic, and cheese and simmer until heated through.
Serve in shallow bowls with additional cheese and bacon!
