Easy Slow Cooker Chicken Soup
Ingredients
- 2 lb Chicken Thighs or Breasts
- 0.5 T Sea Salt
- 0.25 t Pepper
- 1 t Poultry Seasoning
- 2 cloves Garlic minced
- 5 C Chicken Broth
- 1 C Carrots chopped
- 1 C Celery chopped
- 1 C Onion chopped
- 2.5 C Wide Egg Noodles optional
- 4 C Kale chopped, stems removed (alternative to noodles)
Instructions
- Place the chicken in the bottom of a crock pot. Sprinkle the salt and pepper and poultry seasoning over the chicken.
- Pour the chicken broth into the crock pot.
- Cook the chicken on high for 4 hours.
- After 4 hours the chicken should be very tender. Remove the chicken from the crock pot and place in a bowl.
- At this point, if you desire, you can strain the broth in the crock pot through a fine-mesh strainer.
- Add the chopped carrots, celery, and onion to the crock pot.
- If using noodles, add them now. If using kale, add it during the last 30 minutes of cooking.
- Shred the cooked chicken and return it to the crock pot.
