Easy Slow Cooker Chicken Soup

Ingredients
  

  • 2 lb Chicken Thighs or Breasts
  • 0.5 T Sea Salt
  • 0.25 t Pepper
  • 1 t Poultry Seasoning
  • 2 cloves Garlic minced
  • 5 C Chicken Broth
  • 1 C Carrots chopped
  • 1 C Celery chopped
  • 1 C Onion chopped
  • 2.5 C Wide Egg Noodles optional
  • 4 C Kale chopped, stems removed (alternative to noodles)

Instructions
 

  • Place the chicken in the bottom of a crock pot. Sprinkle the salt and pepper and poultry seasoning over the chicken.
  • Pour the chicken broth into the crock pot.
  • Cook the chicken on high for 4 hours.
  • After 4 hours the chicken should be very tender. Remove the chicken from the crock pot and place in a bowl.
  • At this point, if you desire, you can strain the broth in the crock pot through a fine-mesh strainer.
  • Add the chopped carrots, celery, and onion to the crock pot.
  • If using noodles, add them now. If using kale, add it during the last 30 minutes of cooking.
  • Shred the cooked chicken and return it to the crock pot.
  • Continue cooking until the vegetables are tender and the noodles (if using) are cooked through.
  • Season to taste and serve.
