Place the chicken in the bottom of a crock pot. Sprinkle the salt and pepper and poultry seasoning over the chicken.
Pour the chicken broth into the crock pot.
Cook the chicken on high for 4 hours.
After 4 hours the chicken should be very tender. Remove the chicken from the crock pot and place in a bowl.
At this point, if you desire, you can strain the broth in the crock pot through a fine-mesh strainer.
Add the chopped carrots, celery, and onion to the crock pot.
If using noodles, add them now. If using kale, add it during the last 30 minutes of cooking.
Shred the cooked chicken and return it to the crock pot.
Continue cooking until the vegetables are tender and the noodles (if using) are cooked through.
Season to taste and serve.
