Ingredients
  

  • 300 gr courgette in stukjes gesneden
  • 500 ml groentebouillon
  • 1 el kokosolie
  • 1 grote witte ui in ringen gesneden
  • 100 ml volvette kokosmelk
  • 2 snufjes kardemompoeder
  • 1 snufje komijnpoeder
  • naar smaak peper en zout
  • naar smaak verse koriander

Instructions
 

  • Verhit de kokosolie in een diepe koekenpan en fruit de witte uienringen tot ze glazig zijn.
  • Voeg de stukjes courgette toe en roer even goed door. Bak de courgette ongeveer 4-5 minuutjes mee.
  • Voeg de groentebouillon toe en breng de soep aan de kook.
  • Laat de courgettesoep met het deksel op de pan zo’n 10 minuten zachtjes doorkoken.
  • Voeg nu de kokosmelk, het komijnpoeder en kardemompoeder toe. Voeg naar smaak nog wat peper en zout toe.
  • Pureer de soep met een staafmixer of in een blender tot een gladde massa.
  • Garneer met verse koriander en serveer.
