Golden Carrot Soup
Ingredients

- 2 green onions chopped
- 1 garlic clove peeled and chopped
- 2 tsp sesame oil
- 1 Tbsp rice vinegar
- 1/2 lime juice of
- 1 tsp fish sauce optional
- 1 Tbsp honey
- 1 Tbsp fresh ginger chopped
- 3/4 tsp turmeric powder
- 1/2 tsp cayenne
- 1/2 tsp salt
- 1/4 cup roasted peanuts for garnish
Instructions
- Steam or boil carrots until tender, about 10 minutes. Drain and let cool slightly.
- Combine carrots, coconut milk, bell pepper, green onions, garlic, sesame oil, rice vinegar, lime juice, fish sauce (if using), honey, turmeric, and cayenne in a blender.
- Blend until smooth and creamy.
