This Mediterranean-inspired recipe is a vegetarian delight, perfect for a chilly evening or a light yet satisfying lunch. Lentils are a fantastic source of protein and fiber, making this soup not only tasty but incredibly good for you too.

This isn’t your average lentil soup. We’ve carefully balanced the flavors with fresh herbs like oregano and thyme, and a touch of Braggs Liquid Aminos for a savory depth that will have you coming back for seconds. It’s a simple recipe, but the result is a truly flavorful and satisfying meal.

What makes this Lentil Soup special?

  • Flavorful Base: The combination of carrots, celery, and onion creates a classic aromatic foundation.
  • Fresh Herbs: Oregano and thyme add a bright, Mediterranean touch.
  • Vegetarian & Healthy: Packed with plant-based protein and fiber.
  • Easy to Make: Ready in under an hour, perfect for busy weeknights.

Tips for the Best Lentil Soup:

  • Lentil Choice: We recommend green, brown, or red lentils. Red lentils will break down more and create a creamier texture.
  • Simmer Time: Don’t rush the simmer! Allowing the soup to simmer for the full time ensures the lentils are tender and the flavors meld together beautifully.
  • Seasoning: Taste and adjust the seasoning as needed. You may want to add a pinch of salt or more pepper to suit your preferences.
