Minestrone is a classic Italian vegetable soup, traditionally made with whatever seasonal vegetables are on hand. Our version simplifies the process without sacrificing flavor. We use a convenient frozen vegetable blend and canned beans to cut down on prep time, making it perfect for busy schedules. It’s a fantastic way to sneak in extra veggies, even for picky eaters!

Frequently Asked Questions

Q: Can I make this soup ahead of time?
A: Yes! Minestrone actually tastes even better the next day after the flavors have had a chance to meld. Store it in an airtight container in the refrigerator for up to 3 days.

Q: Can I freeze this soup?
A: Yes, but the pasta may become slightly mushy. It’s best to freeze the soup before adding the pasta, and then cook the pasta separately when you reheat it.

Q: Is this soup gluten-free?
A: Not as written, due to the pasta. You can easily make it gluten-free by using gluten-free pasta.

Q: What does ‘Minestrone’ mean?
A: ‘Minestrone’ literally means ‘big soup’ in Italian, referring to the hearty and substantial nature of the dish.

Q: Can I use fresh vegetables instead of frozen?
A: Absolutely! About 4 cups of chopped fresh vegetables would be a good substitute for the 1 cup frozen blend and 4oz carrots.
