Ingredients
- 4 slices Bacon About ¼ Lb, sautéed & crumbled, reserving bacon grease
- 2 C Riced Cauliflower
- 1 C Celery Finely chopped (About 2 large ribs)
- 1 C Red Pepper Finely chopped
- ½ C Onion Finely chopped
- ½ C Carrot Finely chopped (About 1 small)
- 4 C Water Or Chicken Stock
- 1 T Chicken Base
- 1 T Cumin + more to taste
- 1 T Pickled Jalapenos Optional
- 1 C Diced Tomatoes
- 1 T Pickled Jalapeno Juice
- 1 C Diced Tomatoes
- 1 T Pickled Jalapeno Juice
Instructions
- Cook bacon until crispy. Remove and crumble, reserving bacon grease.
- In the reserved bacon grease, sauté celery, red pepper, onion, and carrot until softened.
- Add water (or chicken stock), chicken base, cumin, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Use an immersion blender (or transfer to a regular blender) to partially blend the soup to desired consistency.
