Low Carb Black Beanless Soup

Ingredients
  

  • 4 slices Bacon About ¼ Lb, sautéed & crumbled, reserving bacon grease
  • 2 C Riced Cauliflower
  • 1 C Celery Finely chopped (About 2 large ribs)
  • 1 C Red Pepper Finely chopped
  • ½ C Onion Finely chopped
  • ½ C Carrot Finely chopped (About 1 small)
  • 4 C Water Or Chicken Stock
  • 1 T Chicken Base
  • 1 T Cumin + more to taste
  • 1 T Pickled Jalapenos Optional
  • 1 C Diced Tomatoes
  • 1 T Pickled Jalapeno Juice
  • 1 C Diced Tomatoes
  • 1 T Pickled Jalapeno Juice

Instructions
 

  • Cook bacon until crispy. Remove and crumble, reserving bacon grease.
  • In the reserved bacon grease, sauté celery, red pepper, onion, and carrot until softened.
  • Add water (or chicken stock), chicken base, cumin, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Use an immersion blender (or transfer to a regular blender) to partially blend the soup to desired consistency.
  • Season with salt and pepper to taste. Add more cumin if desired.
