Instructions
Cook bacon until crispy. Remove and crumble, reserving bacon grease.
In the reserved bacon grease, sauté celery, red pepper, onion, and carrot until softened.
Add water (or chicken stock), chicken base, cumin, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 20 minutes.
Use an immersion blender (or transfer to a regular blender) to partially blend the soup to desired consistency.
Season with salt and pepper to taste. Add more cumin if desired.
