Orzo Veggie Soup
Ingredients
- 2 cups Orzo
- 4 cups Filtered Water Can substitute with store-bought broth
- 4 medium Carrots
- 2 medium Potatoes
- 1 small head Broccoli
- 1 large Zucchini
- 1 cup Frozen Peas
- to taste Salt
- to taste Montreal Chicken Seasoning
Instructions
- Start by slightly toasting your orzo in the pot with a little bit of olive oil. About a minute or two till it turns golden brown.
- Once toasted add 4 cups of water and bring to a boil.
- Once it boils turn the heat down to medium-low. Cover with a lid and let cook.
- While your orzo cooks, peel, chop and dice all of your veggies.
- Add carrots & potatoes first as they tend to take longer to soften up. Wait ten minutes then add remaining veggies. Broccoli, zucchini & peas.
- Add salt and Montreal seasoning to taste.
