Ciorbă de Carnețe (Romanian Meatball Soup)
Ingredients
- 1.5 liters Water
- 500 grams Beef or pork, cut into small cubes
- 2 medium Onions, chopped
- 2 large Carrots, sliced
- 1 parsnip Parsnip, sliced
- 200 grams Tomato paste
- 1 cup Cabbage, shredded
- 1 cup Green beans, chopped
- 1 cup Potatoes, diced
- 1 tbsp Dried savory (cimbrul) Or 1 tbsp dried thyme and 1/2 tsp dried oregano
- 1 tsp Salt To taste
- 1/2 tsp Black pepper To taste
- 2 tbsp Vegetable oil
- 1/4 cup Fresh parsley, chopped For garnish
- 1/4 cup Fresh lovage, chopped Or celery leaves
Instructions
- In a large pot, heat the oil and brown the meat cubes. Remove the meat and set aside.
- Add the chopped onions and sauté until translucent. Add the sliced carrots and parsnip and cook for another 5 minutes.
- Stir in the tomato paste and cook for 2 minutes.
- Return the meat to the pot. Add the water, salt, and savory. Bring to a boil, then reduce heat and simmer for 30 minutes.
